Spicy Lime Shrimp Kebabs with Avocado-Cilantro Sauce

Excite the senses with a flavorful mix of sweet heat, citrus and creamy avocado sauce. This dish is the ultimate crowd-pleaser! Serve with a crisp white wine that highlights bright acidity and citrus notes.
  • 2 lbs shrimp, peeled and deveined
  • Shrimp marinade (recipe follows)
  • Avocado-cilantro sauce (recipe follows)
  • For the Shrimp Marinade:
  • 1 tbsp hot honey
  • 2 tbsps olive oil
  • 3 tbsps fresh Lime juice
  • finely chopped cilantro
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • For the Avocado-Cilantro Sauce:
  • 1 tbsp fresh lime juice
  • Half an avocado
  • 1 clove garlic
  • 1/4 sour cream
  • Large handful of cilantro leaves
  • 2 tbsps water
  • 1/2 tsp salt
  1. Combine all marinade ingredients except shrimp in a large bowl. Whisk well to combine. Add shrimp and toss to coat shrimp. Refrigerate for 20-30 minutes.
  2. Heat grill to medium high.
  3. To make the sauce, combine all ingredients in a blender or food processor and pulse until creamy and no large pieces of cilantro remain. Add additional water to attain desired consistency.
  4. Place the shrimp on metal skewers, about 5-7 shrimp per skewer.
  5. Cook shrimp for 2-3 minutes per side or until pink, opaque and lightly charred.
  6. Serve with the avocado-cilantro sauce, as well as any other side of your choosing.
