  • 4 cups mixed raw nuts - hazelnuts, almonds, cashews, pecans, brazil nuts and walnuts - any mixture will do
  • 2 shallots - sliced thinly
  • 2 garlic cloves - sliced thinly
  • 3 tbsps fresh rosemary - chopped
  • 1 tsp cayenne pepper
  • 1/2 tsp cinnamon
  • 1 tbsp maldon salt
  • 1 tbsp maple syrup
  • 3 tbsps butter
  • Olive oil

Preheat oven to 350 degrees.

  1. Roast nuts on baking sheet for 8-10 minutes until toasted and fragrant.
  2. While nuts are in the oven, heat a small skillet over medium heat and add a drizzle of olive oil and saute’ shallots and garlic until golden, the last few minutes of cooking add the rosemary. Place in a small bowl and set aside.
  3. Melt butter and maple - stir.
  4. Pour over nuts, add the spices - cayenne pepper, cinnamon, and salt, toss together then add shallot mixture, toss and then taste and adjust seasoning if necessary. Serve warm.
