  • 1 1/2 cups shredded mozzarella
  • 4 ozs smoked salmon
  • 1/3 cup red onion - thinly sliced
  • 2 tbsps fresh chives or dill - chopped
  • Sour cream garnish
  • Olive oil
  • Cornmeal
  • 1 homemade or store bought pizza dough (divided - usually makes 2 pizzas) rolled out to about 12-14 inches
  1. Prepare pizza oven or heat grill on high heat with pizza stone.
  2. Prepare all ingredients and have ready to assemble pizza.
  3. Prepare pizza on pizza peel or pan - dust with cornmeal for easy transfer to oven.
  4. Gently brush dough with olive oil then sprinkle with cheese.
  5. Slide pizza into pizza oven or onto hot stone and cook until cheese is melted and sides are crispy and brown about 4-6 minutes.
  6. Finish pizza with smoked salmon pieces, red onion and a sprinkling of chives or dill. Garnish with sour cream.
  7. Slice and serve pizza with Migration Pinot Noir, Calera, Goldeneye or Decoy Wines.
