Forever Roasted Pork with Citrus & Cloves

  • For the Pork:
  • 6-8 lb Boneless Boston Butt Pork Shoulder
  • 1/4 cup Salt
  • 1 tbsp Black pepper, crushed
  • 2 tbsps Thyme, chopped
  • 8 Cloves, whole
  • For the Citrus Marinade:
  • 2 cups Orange juice
  • 1/4 cup Lemon juice
  • 1/4 cup Lime juice
  • 1 tbsp Orange zest
  • 1 tbsp Lemon zest
  • 1 tbsp Lime zest
  • 1/2 cup Honey
  • 3/4 cup Olive oil

Serves: 8

*This dish requires two days to prepare.

1. Pulse salt, black pepper, thyme and cloves together in a spice grinder or food processor until it forms a paste. Rub all over the pork and let sit for 24 hours.

2. Combine the citrus juices, olive oil and honey. Pour over the Pork

Preheat oven to 450 degrees.

Place Pork on a foil lined roasting pan at least 4” deep uncovered and roast for 1 hour. Lower oven to 350 degrees and cover the pork. Baste with Citrus Marinade and continue to cook for 4 hours. Baste with the citrus marinade every hour. Pork is done when a fork can easily be inserted and twisted without resistance. Skim any excess fat from the marinade and serve the citrus juice over sliced pork.
