- In a medium size pot, heat the coconut oil to medium heat and saute the onions.
- Add the carrots and honey and saute for 5 minutes.
- Add the water, coconut milk and ginger. Bring up to a simmer and cook until carrots are tender.
- Carefully transfer soup to a blender and blend until smooth.
- Push the blended soup through a strainer. Season the soup with lime juice, salt and pepper.
