  • 1 tbsp Coconut Oil
  • 1 medium Yellow Onion, sliced
  • 2 tbsps Honey
  • 1 1/2 inch piece of ginger, minced
  • 10 Carrots, peeled/chopped
  • 1 can Coconut Milk
  • 1 qt Water
  • 1 tbsp Lime Juice

Serves: 8

In a medium size pot, heat the coconut oil to medium heat and saute the onions. Add the carrots and honey and saute for 5 min. Add the water, coconut milk and ginger. Bring up to a simmer and cook until carrots are tender. Carefully transfer soup to a blender and blend until smooth. Push the blended soup through a strainer. Season the soup with lime juice, salt and pepper.
