  • 1 tbsp coconut oil
  • 1 medium yellow onion, sliced
  • 2 tbsps honey
  • 1 1/2 inch piece of ginger, minced
  • 10 carrots, peeled/chopped
  • 1 can coconut milk
  • 1 qt water
  • 1 tbsp lime juice
  1. In a medium size pot, heat the coconut oil to medium heat and saute the onions.
  2. Add the carrots and honey and saute for 5 minutes.
  3. Add the water, coconut milk and ginger. Bring up to a simmer and cook until carrots are tender.
  4. Carefully transfer soup to a blender and blend until smooth.
  5. Push the blended soup through a strainer. Season the soup with lime juice, salt and pepper.
