  • 1/2 lb steak - Chateaubriand or other preferred steak - cut into 1/4 inch thick strips
  • 1 red and yellow pepper - cleaned and cut in chunks
  • 1 zucchini - sliced in thin strips or chunks
  • 1 red onion - cut into chunks
  • Marinade
  • 2 garlic cloves - minced
  • 3 tbsps soy sauce
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 tbsp lemon juice
  • 1 tsp orange zest
  • 1 tbsp honey
  • 2 tbsps olive oil
  • 10 wooden skewers - soaked in water for 1 hour
  1. For marinade, in a large glass bowl combine all the ingredients except the meat and vegetables. Whisk together until incorporated.
  2. Skewer the meat onto the wooden skewers. Skewer the vegetables onto the wooden skewers. I like to do meat and vegetables on separate skewers but you can mix them if you wish.
  3. Brush each skewer liberally with marinade and let rest on counter for 30 minutes.
  4. Heat grill on medium high heat. When heated place skewers on grill and cook for 8-10 minutes turning as needed, or cook until desired doneness.
