Ingredients
  • For the Pork:
  • 6-8 lb boneless Boston Butt Pork Shoulder
  • 1/4 cup salt
  • 1 tbsp black pepper, crushed
  • 2 tbsps thyme, chopped
  • 8 cloves, whole
  • For the Citrus Marinade:
  • 2 cups orange juice
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 1 tbsp orange zest
  • 1 tbsp lemon zest
  • 1 tbsp lime zest
  • 1/2 cup honey
  • 3/4 cup olive oil
Directions

This dish requires two days to prepare.

Preheat oven to 350 degrees

  1. Pulse salt, black pepper, thyme and cloves together in a spice grinder or food processor until it forms a paste. Rub all over the pork and let sit for 24 hours.
  2. Combine the citrus juices, olive oil and honey. Pour over the Pork.
  3. Place Pork on a foil lined roasting pan at least 4” deep uncovered and roast for 1 hour.
  4. Lower oven to 350 degrees and cover the pork. Baste with Citrus Marinade and continue to cook for 4 hours. Baste with the citrus marinade every hour.
  5. Pork is done when a fork can easily be inserted and twisted without resistance. Skim any excess fat from the marinade and serve the citrus juice over sliced pork.
